Beans


       It is suspected that many cancerous tumors require particular proteases to develop. Beans (the humble legume family) help to protect against these types of cancers through the mechanism of protease inhibitors.

      These inhibitors are effective against a wide range of carcinogens, including compounds of diesel exhaust.

      Legumes also contain phytates (phytic acid), and phytoestrogens, which are anticarcinogenic in action.

      Effective amounts appear to be in the 3/4 cup-six times a week range.

      [Tips for gas-free beans: Soak overnight or put them in a pan covered with cold water on high heat. As soon as the water boils, turn off heat and let them sit for an hour.
            Drain and cover again with cold water, using 3x as much water as beans. Bring to boil, reduce heat and simmer for 40-60 minutes.]
